Honey & Lavender Shortbread Cookies

So easy to make! These cookies freeze great.

1 cup butter, softened
1/2 cup sugar
3 tablespoons honey
2 cups flour
pinch of salt
3 teaspoons dried lavender 

In a large bowl cream together the butter, sugar and honey until light and fluffy. Add the flour, salt and lavender and mix until combined.  Form dough into a large ball and cover with plastic wrap. Freeze for 1/2 hour or 2+ hours in the refrigerator.

Preheat the oven to 325o

Roll dough to 1/4 inch and cut using cookie cutters. Place 1-2 inches apart on a lightly greased or parchment lined baking sheet. 

Bake 15-20 minutes (depending on sizes), or until light golden brown. Let cool completely before serving.
